Go Above and Beyond

After graduating with a bachelor’s degree from an accredited program, an aspiring RD must be complete a dietetic internship and pass a state licensure exam. Licensure requires continuing education courses. Starting in 2024, aspiring RDs must hold a graduate degree. In addition to running an elite internship program, Sodexo partners with the University of Rhode Island's highly ranked Master’s program, so interns may pursue a graduate degree.

Kimberly Wolf, MS, RD, LDN, CDE

Kim is a Registered Dietitian and Certified Diabetes Educator. She manages Sodexo’s national outpatient offers, such as TeleNutrition, Medical Nutrition Therapy programs, and the CDC’s Diabetes Prevention Program. She values being able to collaborate with fellow RDs at Sodexo. Kim graduated from the University of Rhode Island with a Master’s in Nutrition through Sodexo’s degree program.

Jason is a Sr. Technical Manager of Patient Nutrition, and joined Sodexo as a Clinical Nutrition Manager focused on acute inpatient care and community education. As a Sr. Area General Manager, he oversaw operations and client relations. He currently implements innovative dining programs, trains onsite leadership, and manages process improvement projects, using expertise to drive clinical outcomes.

Stacey Smith, RD, CSP, LDN

Stacey is a certified specialist in Pediatric Nutrition (CSP) and the Sr. Operational Support Mgr. overseeing foodservice for 7 hospitals, 2 rehab facilities and 4 long-term care centers. She analyzes patient menus, trains on modified diets, and assists with regulatory compliance. She liaises between the clinical nutrition and foodservice teams, so patients eat delicious and nutritious meals!

Amanda Bower, MS, RD, LD

Amanda has dedicated most of her career to Pediatrics. She has participated in several sub-specialties, including neonatal intensive care, pediatric dialysis and pediatric neurology. She practices as a Neurology Keto dietitian, training patients and families on the ketogenic diet. Amanda is also an Adjunct Instructor at Oklahoma State University, has contributed to research on neonatal nutrition.

What is the Keto Diet and How Does it Work?

Yoko Takashina, MS, RD, CNSC, CCTD

Yoko works in an acute care academic teaching hospital in Los Angeles. Her specialties include cardiothoracic surgery nutrition care with extracorporeal membrane oxygenation (ECMO), heart failure, and end stage lung disease. She teamed up with kitchen chefs, patient care supervisors and nutrition team members to expand culture-friendly menu options for inpatients.

Sodexo’s elite Dietetic Internship program proudly trains future nutrition and dietetics professionals, and offers specialization in one of 8 elective concentrations. Our partnership with the University of Rhode Island’s award-winning Master’s program allows our interns to pursue a graduate degree in dietetics. Our graduates may practice in Sodexo contracted hospitals across the country.
