As Sodexo chefs from around the globe get ready for the 2024 Cook for Change challenge, we sat down with Sam Blackburn, last year’s finalist from North America, to dive into what makes this competition so meaningful. Representing Sodexo North America and the Healthcare segment, Sam’s passion for creating sustainable, health-focused dishes is evident in every plate he crafts. He shares his insights on last year’s challenge, the inspiration behind his cooking and his advice for this year’s competitors.
Q: Which Sodexo commitments inspire you most as a chef?
A.: Sodexo’s global commitment to sustainability and wellness inspires me the most. I’m particularly active in our Mindful program in North America, collaborating with segments and partners like Unilever and Entegra to develop recipes centered on health and wellness. A zero-waste approach is central to my cooking, as is the cross-utilization of ingredients to make our dishes truly shine.
Q: What prompted you to take part in the 2023 Cook for Change challenge?
A: Since 2018, I’ve loved culinary competitions, as they ignite my passion for creating winning dishes. But this challenge has special meaning because I represented Sodexo North America and, more specifically, the Healthcare segment. Making a positive impact in our continent’s largest segment is a tremendous opportunity, and the support from my team throughout the journey was unwavering
Q: What memory did you take away from the final?
A: The fellowship, camaraderie and friendships I formed with chefs from around the world will stay with me forever. This competition was such an enriching experience, as I got to learn about the diversity of our culinarians and operators globally. It was incredible!
Q: What are your tips for the 2024 finalists?
A: Mise en place is key. Plan your work and work your plan. You’re competing against exceptionally talented chefs, so stay flexible and be ready to pivot. Most importantly, keep a positive mindset and a smile on your face. Listen to the feedback you receive before, during and after the competition. That’s how we grow as chefs.
What’s Next: The 2024 Cook for Change challenge
This year, Cook for Change is bigger than ever! Between May and June, a record 350 chefs from across the globe entered regional heats, each showcasing innovative, plant-based dishes that capture the excitement of sustainable cooking. This surge in participation reflects Sodexo’s commitment to sustainability, responsible eating and culinary creativity.
By early September, Sodexo’s local culinary teams carefully reviewed each recipe, narrowing the field down to eight chefs — one per region. These finalists are now preparing to represent their regions in an incredible global cook-off held in the heart of Paris on November 14!
A Competition That Embraces Sodexo’s Responsible Eating Vision
Beyond competition, Cook for Change champions Sodexo’s values of sustainability and responsible eating. During the final, chefs will highlight sustainable practices including:
- Crafting 100% plant-based recipes to minimize animal product consumption.
- Choosing sustainable ingredients and energy-efficient cooking methods to lower carbon footprint, water use and energy demand.
- Embracing zero food waste, using every part of each vegetable, even those typically discarded.
An Impact That Reaches Beyond the Competition
Cook for Change is more than just an event; it’s a powerful demonstration of Sodexo’s commitment to sustainable eating. Once crowned, the winning recipe will be shared across Sodexo restaurants worldwide, bringing delicious and responsible dishes to tables far and wide.
