Discovering a Passion for Nutrition
Rachel’s journey into nutrition began with a simple inspiration, a lifelong connection to healthcare.
Growing up with a mother who worked in the medical field, she always knew she wanted a career centered around caring for others. While she started college undecided about her major, everything changed after taking her first nutrition course.
“I was fascinated by the science behind how food impacts the body and overall health,” she shares.
Once she learned more about the role dietitians play in patient care, the path became clear.
“Caring for people through food and nutrition felt like the perfect combination of compassion and science for me.”
Growing a Career in Clinical Nutrition
Before joining Sodexo in February 2022, she gained experience working with both inpatient and outpatient populations, primarily with acute rehabilitation patients. During that time, she developed a strong interest in enteral nutrition, which eventually led her to pursue a more intensive nutrition-support focused role.
She transitioned to acute care, where she advanced her clinical expertise, worked closely with ICU patients, and earned her Certified Nutrition Support Clinician (CNSC) credential.
When she returned to her hometown area, she intentionally sought out a role with Sodexo at Lehigh Valley Health Network because of the complexity and acuity of the patient population.
She joined as a Dietitian Nutritionist III, supporting intensive care units, managing total parenteral nutrition (TPN), and placing small-bore feeding tubes. Over time, she stepped into additional leadership responsibilities, becoming a Lead Dietitian and later advancing to her current role as Clinical Nutrition Manager.
Improving Patient Care and Community Health
In her leadership role, Rachel and her team support patient well-being through timely nutrition assessments, personalized nutrition plans, and ongoing monitoring for high-risk patients.
Her team’s impact also extends beyond the hospital. Through support groups, health fairs, and media outreach, they share evidence-based nutrition guidance with the broader community, helping individuals better understand how nutrition supports overall health and wellness.
One of the aspects she values most about working at Sodexo is the collaboration across clinical teams nationwide.
“The best part of working for Sodexo is the collaboration and shared innovation across the organization,” she explains. “Sharing tools, ideas, and best practices allows us to continuously elevate the standard of care.”
Celebrating the Role of Registered Dietitians
For Rachel, raising awareness about the role of registered dietitians is incredibly important to the healthcare field.
“Many people don’t fully understand what dietitians actually do,” she explains. “The public is often exposed to nutrition advice through social media and other platforms, but they may not realize the depth of education, training, and expertise behind our profession.”
She believes it’s important to highlight the research, patient care, and real-world impact dietitians bring to healthcare every day, while also recognizing the dedication of professionals across the field.
Through leadership, collaboration, and a commitment to patient care, she continues to make a meaningful difference for patients and the community she serves.
