Jessica Russell’s interest in clinical nutrition began long before she became a dietitian. Growing up in a health-conscious family and seeing loved ones manage different health conditions introduced her to the connection between nutrition and health. After shadowing a clinical dietitian in high school, she knew she had found a career where she could make a difference.
Her career has since taken her through intensive care, pediatrics, maternal and child nutrition and, eventually, back to the clinical setting she enjoyed most. Today, Jessica supports the medical ICU at Cape Fear, where she collaborates with an interdisciplinary team, works with patients requiring parenteral nutrition and advocates for nutrition as an important part of patient care.
Since joining the Cape Fear team, Jessica has also earned her Certified Nutrition Support Clinician (CNSC) credential with support from Sodexo, including continuing education resources, study materials and exam reimbursement.
For Jessica, Cape Fear provides exactly the kind of environment she recommends to clinicians who want to grow.

With 35 years as a dietitian and 20 years at Cape Fear, Darcy Mundell has seen firsthand how a career can evolve over time.
Darcy first joined Cape Fear as a clinical dietitian in 2006 after moving to Fayetteville with her family. Her career expanded into clinical nutrition management, patient services and operations before ultimately bringing her back to her passion: leading clinical nutrition teams. When Sodexo began supporting the team in 2025, Darcy continued her journey as System Clinical Nutrition Manager.
Today, she is especially proud of helping other team members pursue their own professional goals. At the same time, she continues investing in her own development through leadership training, mentorship and her plans to pursue a Doctorate in Clinical Nutrition.
After two decades at Cape Fear, Darcy’s connection to the organization remains rooted in the people and community it serves.

For Tara Buckley, a passion for fitness helped spark an interest in nutrition and eventually led to a career as a dietitian.
Her career has included serving as a dietitian in the Army before eventually joining Cape Fear, where she has now spent nearly a decade. Today, Tara serves as Lead ICU Dietitian, bringing years of clinical experience to a role focused on some of the hospital’s most complex patients.
Since joining Sodexo, Tara has also benefited from educational and professional resources that support her continued development. Her progression to Lead ICU Dietitian reflects the clinical expertise and leadership she brings to the Cape Fear nutrition team every day.
Rachel Rowell proves that there is no single path to a meaningful career in nutrition.
After spending 10 years in property management, Rachel realized she wanted something different. A personal interest in nutrition eventually led her back to school and into a new career as a registered dietitian. Early clinical experiences introduced her to critical care, and she quickly discovered it was an area she wanted to pursue more deeply.
Already a Sodexo employee, Rachel chose to relocate to Fayetteville when an opportunity at Cape Fear offered the chance to further develop her nutrition support expertise. In less than a year at the hospital, she has learned to write custom parenteral nutrition, earned her CNSC credential and continued progressing through Sodexo’s clinical career ladder.
She credits both the opportunities available at Cape Fear and the support of her manager and team with helping her reach her professional goals.
“The dietitian team that I work with is definitely the best and most close-knit of all the teams I’ve been on. There’s such a variety of knowledge and experience to draw from, and everyone is always willing to help out.”
Jessica, Darcy, Tara and Rachel each took a different path to Cape Fear, but their experiences share a common thread: the opportunity to learn, grow and make an impact through patient care.
