Championship Hospitality for Super Bowl LIV

Published on : 1/17/20
  • In the sports and entertainment world , you can’t get bigger than the Super Bowl. The game has morphed into a spectacle, with the on-field action, halftime show and commercials enjoyed by 70,000+ fans in person and watched by a global audience. For that in-stadium experience, the Centerplate team at Miami’s Hard Rock Stadium has been preparing  for months to deliver the ultimate fan experience

    We are:

    • partnering with prominent local restaurateurs and food and beverage brands,
    • deploying custom concepts and menus that capture the flavor of Miami,
    • developing specialty items for the general concourse areas and premium hospitality spaces to serve different audiences.

Led by General Manager Kevin Mitchell, Senior Executive Chef Orlando Morales and Executive Chef Dayanny de la Cruz -- the first female executive chef to lead the dining efforts for a Super Bowl -- the 2500+ person culinary team will use 9+ kitchens to prepare and serve dishes that reflect both the grandeur of the event and the distinctive setting of South Florida.

Cubano sausage, ceviche, empanadas, fresh guacamole with locally sourced avocados and the locally prized Mojo Donuts will all be part of a specialized menu designed to celebrate the diversity of nationalities that make up the region.

There will also be the speciality 18-inch Key West Hot Dog on a warm toasted bun with lime-infused plantain chips and housemade BBQ pulled pork sandwiches A seafood paella with its recipe sourced directly from colleagues in Madrid, macarons imported from Sodexo’s esteemed Lenotre pastry team in France and gourmet chocolate bon bons made by hand and flown in from Denver.

For traditionalists, Centerplate will also be serving game day favorites, like pretzels, nachos and burgers – including offering the vegetarian Impossible Burger for the first time at a Super Bowl. For seafood lovers, the shrimp and lobster tail cocktails and stone crab claws will be crowd pleasers.

Suite holders will be delighted by freshly delivered oysters, farm-raised caviar, Islamorada chicken lollipops and a delectable Caribbean mojo porchetta. And, for fans who want to share a toast, there will be plenty of champagne to go around.

Most importantly, Centerplate is working closely with the venue in innovative ways to reduce the carbon footprint of the stadium. We will have aluminum cups replacing plastics for the first time, and water served in cans. Centerplate’s kitchen oil is recovered into biofuel, creating another layer of renewable energy and we maintain a no plastic straw policy, while the building maintains energy-efficient LED lighting and a reduction on paper from increased mobile tickets and payments.

Centerplate also will donate prepared, but unused food after the festivities to Food Rescue Miami, using climate-controlled vehicles dispatched to drive straight from the venue to such sites as the local Miami Rescue Mission and Lotus House.

For the championship game, Sodexo and Centerplate will have championship hospitality on full display.
